The Czech brand Pepper Field, known for Kampot pepper, has brought a gadget for cooking enthusiasts – an electric Grinder with interchangeable cartridges. In recent weeks, the electric Grinder has been appearing more and more often on social media and with influencers, grinding salt at one moment to process pepper or another ingredient the next. But who is behind this gadget for cooking enthusiasts? Behind the grinder itself, named FinaMill, is a married couple from the United States who spent many years developing the product to solve the problem of cross-contamination of flavors between different spices. And it was the pepper duo Klára Dohnalová and David Pavel, famous for Kampot pepper from Cambodia and the Pepper Field brand, who brought it to the Czech Republic. Read the full article here.

At least in the Kampot region of Cambodia, from where this black gold is imported from local growers. Special limited editions of the brand are popular not only at Christmas. Ingredients 1 medium-sized pumpkin 1 large carrot 1 clove of garlic 1 liter of water a piece of ginger salt lyophilized Kampot pepper cream  juice from half an orange  Instructions 1. Wash the pumpkin and cut it into pieces. Do the same with the carrot. 2. Put everything on a baking sheet together with the garlic clove, drizzle with olive oil, and roast in the oven until the vegetables soften. 3. Then transfer it to a pot, pour in 1 liter of water, and cook until completely soft. 4. Towards the end of cooking, add finely grated ginger and let it cook briefly. 5. Pour in the juice from half an orange and blend until smooth. 6. Finally, stir in the cream (or coconut milk) and season with salt and pepper.  

Ingredients 3 medium-sized beets 3 small potatoes 2 carrots 1 parsley root 1 onion 2 tablespoons of oil thyme 1 liter of water salt Kampot pepper flakes – crushed flakes 1–2 tablespoons of wine vinegar For finishing 1 sour cream 1–2 tablespoons of grated horseradish 1 teaspoon of honey salt, pepper Procedure 1. Cut all the vegetables into cubes or larger pieces and sauté them in oil (about 10 minutes). 2. Salt, pepper, add a few sprigs of thyme and pour about 1 liter of water. Cook until soft. Blend and season with salt, pepper, and wine vinegar. Don't forget the vinegar. 3. Finally, mix the sour cream with horseradish, honey, salt, and pepper. Add a few spoons to the soup and enjoy.  

Ingredients 1 smaller cauliflower white part of 1 leek 1–1.5 liters of water (depending on how thick you want the soup) salt, marjoram red freeze-dried Kampot pepper about 3/4 of Package cream cheese (about 90–100 g) Procedure 1. Cook the cauliflower with the leek until soft, blend until smooth, season with marjoram, salt, and pepper. Finally, stir in the cream cheese, which will beautifully soften and thicken the soup. 2. On top, roast a halved cauliflower floret, bread croutons, garnish, and add crushed Kampot pepper for finishing.  

In one of our recent posts, we revealed to you the mysterious pepper oil from Kampot pepper and looked into its health effects. This time, it will also be about this oil, but we will look at it from the perspective of production. Extracting the essence by distillation Black pepper oil from black pepper can be obtained either directly from crushed peppercorns, or it can be extracted from the pepper vines on which the peppercorns grow. In both cases, the key to obtaining the essential oil is the distillation process. Specifically, it is steam distillation, where steam under high pressure is filtered through organic material—in this case, parts of the pepper vine plant or directly the peppercorns. The oil is then separated from the water and bottled. The yield ranges between 1 and 4% of the total biomass volume. This is also why it is a relatively expensive product. The good news is that due to the high concentration of substances contained in pepper, only a few drops are enough for most uses. Easily soften the concentrated strength For some, however, this oil may be too strong. In such cases, it can be combined with other oils. It pairs very well with citrus oils and oils from flower petals. Suitable examples are orange, grapefruit, lemon, or bergamot, or lavender. Due to its pungency, you can also try combining it with essential oils of eucalyptus or tea tree. Try creating a blend of 20 ml sunflower or calendula oil, 10 ml St. John's wort oil, 1 drop of black pepper essential oil, and several drops of ginger and lemon essential oils. You will obtain a perfectly fragrant bomb that you can use for muscle stiffness and a whole range of other ailments, which you can read about in our articles.

Sustainability is one of the cornerstones on which .pepper..field is built. After all, it is no coincidence that we placed second in the Business category in this year's SDGs Awards announced by the Association of Social Responsibility. Sustainability is reflected in every aspect of our operations and is also present in the way we package our products. The materials we use for this purpose primarily include Czech glass, cork, and wood. Thanks to cooperation with the company Kartoons, we have recently added another material, cardboard. It tends to accumulate in basements or attics, or ends up in bins or stoves. Yet so many interesting things can be created with it. Design, quality, recycling   We decided to give cardboard a second chance and create design-precise boxes from it, as well as stands for our glass test tubes. We store the test tubes and wooden grinders in special boxes that are sustainable, easily recyclable, and minimally impact our planet. Moreover, you can keep our products in them for a long time and always return to them if you need to add a bit of Cambodian sunshine hidden in peppercorns to your food. Our next cardboard innovation is special stands where the test tubes can be stored, keeping them handy while cooking. With a stylish stand, the test tubes also become a great design decoration for any kitchen counter. And what's more, when the pepper runs out, you can refill the test tube in the stand with pepper again, or fill it with water and place cut flowers or propagated houseplants in it. We would really like to spread the idea of upcycling further among our customers. Every packaging for our products can find at least one additional use. What uses will you come up with? Long maturation and fermentation periodThe long ripening of Kampot pepper allows for a deeper development of flavors. For example, red pepper, which is harvested fully ripe, has milder and fruitier tones.Mass production: pepper is often harvested prematurely to speed up processing and increase yields. This leads to less developed flavors and weaker aroma.5. Fair trade and direct cooperation with farmers.pepper..field works directly with original family farmers, ensuring them fair rewards, sustainable conditions, and direct purchase. Fresh pepper directly from the farm is thus on your table within a few days or weeks.Mass production: commercial pepper often comes from anonymous suppliers who receive low purchase prices and are forced to cut costs – and thus the quality of the product. The resulting pepper then travels through several resellers to its destination, sometimes taking several months.6. Intense aroma and flavor experienceKampot pepper has floral, fruity, and spicy tones that gradually and long develop on the tongue.Mass production: common pepper often tastes simply spicy because it does not have enough time to develop rich flavor nuances. That is why you may not even like regular pepper – because it lacks taste.7. Exclusivity and certified qualityKampot pepper is protected by a geographical indication (PGI), which guarantees its authenticity and quality. It is something like genuine champagne.Mass production: industrially produced peppers do not have this certification, which means they may contain blends from different regions without guaranteed quality.Kampot pepper from .pepper..field is simply synonymous with honest taste and premium quality. Every year we organize a Czech pepper expedition and take our colleagues, customers, and friends to the farms. This year's expedition was once again a "shock". At the end of the day, we asked what surprised them the most about working with Kampot pepper. Terezka: "You have to wait 4 years for that pepper plant to grow! That's incredible patience. Moreover, since it's organic, it is insanely sensitive." "Most farms still draw water from the irrigation pond by hand, bucket by bucket, walking kilometers, and yet everyone remains positive and smiling." Anička "I came with the idea that it would be like blueberries and it has 4 meters of pepper!""Red pepper is terribly tricky! Because you have to pick it berry by berry, as each berry ripens at a different time." Martina "This is my second time here. I really like seeing that farms have finally started to expand and plant new seedlings. When we came the first time, the farms were dying." Nikola "I was surprised by how little pepper you get from the hard work on one plant per year! I calculated it, and from this little field, the whole family gets only about 200 kg of pepper." Jana "I was shocked that from one green pepper berry you actually get all types of Kampot peppers, that the taste is just a matter of ripening time. And that white is therefore the most demanding of all, because you pick berry by berry last and it is still peeled."

Once again, after a year, a Czech expedition arrived in Cambodia to discover the beauties of Cambodia and spend time on our farms with Kampot pepper. To show them the best of Cambodia, we immediately set off from the airport to our friendly Kohchann Primary School for a welcome. We had an important task ahead – to hand over the money that we collected thanks to you and thanks to SIA Restaurant for the construction of a new library for the school!In total, we raised 2000 dollars, a much-needed amount for completing the building called SMART LIBRARY.We have been supporting the school since 2015, when it had only a few dozen students, classes were held in a wooden gazebo, and the children did not yet have uniforms.Today, the school has about 400 students and is doing very well.The group's welcome was magnificent. The children sang, danced, played musical instruments, and had prepared for us Cambodian krama – traditional scarves that locals wear as the most important part of their clothing. Each member of the expedition had a picture drawn by the children, and then we joined a procession to the library.“Here we are building right next to the new building, it will be four entire classrooms,” the principal Makara proudly said.After the library, there was a photo session and wiping away the first tears of the newcomers, then we were invited to a traditional apsara dance, which is protected by UNESCO, and the children performed it for us in several variations.After this beautiful show, for which we were invited so they could teach us the dance, we handed over the last Czech gifts – mainly musical instruments and Czech memory games.After the official handover of the gift, we all started preparing to leave – the children have a break between 11 a.m. and 1 p.m. when they go home by bike for lunch. Filled with impressions, we said our final bows and with a loud “sok sabaj! ” which means “take care! ” we set off back on the journey with the group.

Dragon fruit is full of vitamins, also contains iron, calcium, and phosphorus, and can boast a high content of antioxidants that prevent aging of the body, and some scientists are even studying its anti-cancer effects. Quality nut butters are a valuable source of healthy fats without cholesterol. Together, they form a perfect tandem suitable, for example, for guilt-free snacking or to supplement the right nutritional values in your diet. Dragon fruit is a symbol for us of the exotic Cambodian markets that we love and where we ourselves shop when we are in Cambodia. In just five years, we have managed to become the largest exporter of Kampot pepper. Worldwide! In numbers, this means that out of 110 tons of Kampot pepper exported annually from Cambodia, 40 tons are accounted for by us. We started the .pepper..field project with a few hundred kilograms of pepper exported from Cambodia. Today, it is tens of tons, and we want to break through with it worldwide. At the same time, our representatives in Cambodia have managed to get into the leadership of the local Kampot Pepper Association (KPPA).  “The global body not only oversees the authenticity control of Kampot pepper but also the proper functioning of processes between farmers, companies in Cambodia, and target markets. Due to this year’s poor harvest, some farmers and pepper companies started cheating, and this is also one of the responsibilities within KPPA – to allow only Kampot pepper that is genuine and of one hundred percent required quality to cross borders from individual entities,” explains Klára Dohnalová, co-founder of our project, in the article. This year again, we are the most successful Czech company in the GREAT TASTE competition! And that is why this year we received an incredible 25 stars for our products, which is also our personal record. And along with that, a nomination for the GOLDEN FORK. The expert jury of the Guild of Fine Food in London awarded three of our products the highest rating - 3 stars. Out of 13,647 samples from around the world, only 266 products (1.9%) managed this. And what did the judges say about our peppers?  3 stars for 3 of our products Fermented salted Kampot pepper “Salty taste with umami tones. ” “Not all peppers are equal, and fermented Kampot is the true king. ” Green freeze-dried Kampot pepper “Kampot pepper in its best form. ” “The flavor profile of fresh grass, green tea, and citrus is exactly right. ” We still consider green freeze-dried pepper our flagship. It won the GOLDEN FORK in 2021, making us the first Czech company in the history of the competition to receive this gastronomic Oscar. Our fermented salted Kampot pepper advanced to the elite TOP 30 products from a total of 14,647 competing for the GOLDEN FORK. This is the second time we have the chance to show the world how exceptional Kampot pepper we import to the Czech Republic and the entire EU is.   We were also very happy that after one star, the judges also awarded our delicacies: pepper gin from Žufánek and protein chips with black pepper and lime! Not even in our dreams would we have thought of this, but it is true. On April 1, 2024, the annual conference of the Kampot Pepper Association was held in Kampot with the participation of the Ministry of Commerce. The results for 2023 were presented, and new leadership of the Association was also elected. And what happened was beyond our wildest hopes.After only 5 years since the start of the project, we have become the largest exporter of Kampot Pepper in the world. And what’s more, after this year’s elections, we stand at the very head of the Association itself. Our Ajaa was elected its president. Together with David, they won with the campaign “Stronger, together!”, which for the first time in history unites all good companies and farmers in Kampot. Newly, we are globally responsible for 6 areas including marketing of Kampot Pepper, authenticity control, fraud prevention, and more.We are moved, happy, and aware of the commitment this entails. We have become a project that is changing the Kampot region for the better – even at the level of individual human destinies. It is work that is meaningful and fulfilling for all of us. Thank you!  

Do you remember our Facebook contest where customers had the chance to win a trip to Cambodia to visit our pepper plantations? Nikola and her boyfriend David just spent a whole week there discovering Kampot pepper and Cambodia through the eyes of our poorest farming families. We asked them to describe the entire trip as if we were there with them. Read about their experiences and see the impressions Nikola wrote down and photographed together with her partner. They welcomed us as if we were part of the family Their constant smile acted as a connection instead of language, because we struggled a bit with that. But “čolmoj“ and “nadraví“ were enough for us in the evening, and when not, our guide Dolphi and Google Translate helped express how good the dinner was. We were actually served snake soup, which we had seen whole just a few hours earlier. An experience for a lifetime! Kind of like seeing what a real pepper plantation looks like. We had many questions and received many answers. Too bad we couldn’t see the entire process of harvesting and preparing the pepper before it reaches the plate. But well, it’s not the season. That’s part of farming; you are dependent on nature.Even when you go to sleep. During the evening shower of water from a tub, a gecko watches you, and while you sleep on wooden planks, you cover yourself with a mosquito net to protect yourself from mosquitoes that would otherwise eat you alive. And supposedly, it’s not even their season. We also had a nice encounter with the local fauna Watering piglets or training dogs… And the afternoon herding of cows and the morning pasture were more of an event and fun than anything else. Early in the morning on the way back home, you pick a coconut from a palm and try (unsuccessfully) to cut it yourself, feeling the essence of hard but actually lightened farm life.The influence of the Western world hasn’t escaped here either. In the evening, phones with YouTube and a huge speaker come out. Justin Bieber and Ed Sheeran play alongside traditional Cambodian food.But they also have Facebook. Which is great because we can stay connected with Kunthea’s daughter and her friends, who called us “sister“ and “brother“ and left me beautiful, cute messages. I really felt like a princess when five other little princesses kept telling me how beautiful I am.In short, we now feel like part of the family! :-)

Kampot salt is the best partner for our Kampot pepper. Last year, it even received the protected geographical indication PGI, which declares it as one of the best in the world. It is precisely the coarse-grained salt that you stormed before Christmas and was immediately sold out. So we set off with the Czech team directly to the plantation to collect it, and it is finally in stock! Even coarse-grained salt is hand-harvested, not mined The Kampot brine ponds lie, just like Kampot pepper, in the Kampot region. They are about an hour's drive apart, and we set off together there in the late afternoon when the sun was already setting. We were lucky! Small family farms around the salt pans that we support not only welcomed us with a smile but also didn’t let us wait long. "Here you have rakes, we are just collecting coarse-grained salt, come on! " And so we simply collected our coarse-grained salt together with them. How is such coarse-grained salt collected? You have to go barefoot into the salt pans with perfectly clean feet, you get a rake, and from the surface of the salt pans, you collect large salt crystals into the shape of a pyramid. You then carry these in a basket to the local storage. Production only in protective clothing All the salt is then transported to our processing site, which we also visited. The team could observe the strict hygiene processes subject to the high demands of ISO 9001 and HACCP certification; we also received caps and coats, and gradually went through all the machines needed for salt processing. First, there is a large dryer, then a sortex machine that sorts only perfect crystals which continue on for manual processing. In another room, Cambodian women receive the roughly sorted salt, which they then handpick and check crystal by crystal to ensure only 100% quality and purity reach you. In the packing room, we see all the types of salt we import for you – besides the coarse-grained Kampot salt for grinders, the finest and most delicate sea salt flower for final seasoning is also packed here, which was recently gently harvested from the salt pans because the sun was shining and there was no wind. This salt can only be collected under perfect conditions as it is very sensitive. Salt pyramids, which are formed by subsequent reboiling and are a true gem, are already all in the Czech Republic – there are very few of them every year, so we buy them all immediately upon harvest. For honest work, an honest reward - dinner with the farmers And since we were clever, for the well-done work the farmers' family invited us to their place for dinner with Cambodian soup and fruit from the farm. With a feeling of a job well done, we return to the accommodation and can now reveal to you that we brought back a nice couple of tons of coarse salt from Kampot, so hopefully it will satisfy all your demands!Enjoy your meal! :-)
