Kampot pepper is grown in Kampot province located in the very south of East Asian Cambodia.

It is an area that, thanks to its coastal climate and geological conditions, enables local farmers to produce pepper of the highest quality in the world. Not without reason, this pepper has earned a protected geographical indication, just like French champagne.
From small family farms, we buy pepper under direct trade conditions that ensure a fair reward for every grower, and we strive to promote this approach among other traders.

Characteristic

A rare dark red Kampot pepper unleashes an explosion of fruity notes in the mouth, accompanied by a milder spiciness.

Initially, the dark red peppercorns release aromatic tones of blood oranges, cranberries, and elderberries, underpinned by characteristic notes of cedar and lemon balm with a subtle hint of tobacco leaves. After a while, the heart of the dark red pepper begins to emerge, reminiscent of leavened dough, fresh spices along with roasted malt. It is a very full-bodied fragrance that gradually transitions into black Assam tea, and in the finish, notes of cedar reappear.

We can literally call dark red pepper a selection of berries. These are strictly selected red seeds achieving the highest color saturation of their peel.

Usage

Thanks to the high fructose content, which gives red pepper an intense fruity taste, this pepper can be experimented with when mixing drinks or preparing sweet pastries.

The more finely you grind the Kampot pepper, the more intense will be the spiciness, on the other hand, larger fragments or whole peppercorns will impart more distinctive pepper notes to the dish.
