Processing

Handmade fine work, which has remained unchanged for hundreds of years, is how Cambodian sea salt is obtained.

It crystallizes on the surface of special pools called salines, into which ocean water is driven and enclosed. The water slowly evaporates under the influence of the sun and wind, and salty crystals form on its surface. The opposite is true for coarse salt, which is obtained from the bottom of the salines.

The resulting crystals are collected by hand, without any technical intervention, only with the help of long wooden rakes. Thanks to this, the salt's structure remains consistent and the salt is perfectly clean and of the highest quality.

The collection and processing of sea salt are handled similarly to pepper in Kampot by individual small farms. Farming families pass down the tradition of sea salt production from generation to generation. The salt is therefore of absolute biological quality, without the need for any subsequent refining. And just like with pepper, we also buy the salt directlyfrom these farmers to ensure that they receive fair compensation for their hard work.

Usage

Kampot salt has endless uses.

Coarse salt 120 g

You can use coarse sea salt for everyday cooking. Season with it, use it for pickling, preserving meat, fish, and vegetables, prepare marinades from it, let meat rest in a salt crust, or decorate the surface of baked goods with it.

Thanks to its fineness and texture, fleur de sel is mainly used as the final touch of a prepared dish. It definitely does not belong in a grinder; just lightly crush it between your fingers and sprinkle the delicate crystals on the surface. They quickly dissolve and perfectly enhance the flavor of the dish. Additionally, if you apply fleur de sel just before serving, it creates a wonderful crystalline effect on both savory and sweet dishes.

Due to its rapid absorption, it is ideal for any meat processing, e.g., curing. Thanks to its good adhesion and aesthetic perfection, it is widely used for the final seasoning of dishes, whether it is carpaccio or caramel or chocolate desserts.

Origin

Perfectly pure, full of flavor and minerals, such is the salt from the salt pans of the Cambodian province of Kampot.

The tradition of sea salt harvesting is as deeply rooted in the region as pepper cultivation. The conditions here are ideal: strong sun, ocean breeze, and a mild climate encouraged the establishment of salt pans and the extraction of salt from the ocean hundreds of years ago. Its quality can be compared to sea salt from the most famous regions in France or Portugal.

Package

Thanks to the materials used and the special bag sealing technology, air and moisture cannot reach the salt.

We pack Kampot salt into doypack bags. Because of this, even after opening, Package salt retains its authentic taste and aroma. After emptying, you can also upcycle the bags as part of sustainability and continue to use them in many other ways. Awards

Quality is our top priority, as confirmed not only by the certificates our salt carries, but also by the awards it receives from international competitions.

Among the most significant are the awards given to our salt within the framework of the Great Taste competition, one of the most prestigious competitions in the world of gastronomy.

However, sustainability is also important to us, which we do not see as just empty words, as evidenced by the SDG’s award given to truly sustainable and socially responsible projects.
