Kampot pepper is grown in the Kampot province, located in the far south of Southeast Asian Cambodia.

This is a region which, thanks to its coastal climate and geological conditions, allows local farmers to produce pepper of the highest quality in the world. It’s no coincidence that this pepper has earned protected geographical indication status, just like French Champagne.

We buy pepper from small family farms under direct trade conditions, which guarantee fair compensation for every grower, and we strive to promote this approach among other traders as well.

Characteristics

Peppers differ in taste and aroma – qualities you’ll hardly find in pepper bought in ordinary supermarkets.

Give a unique box containing glass test tubes with the three basic types of Kampot pepper – often called the "Champagne among peppers". Its quality is considered the best in the world and enhances every dish. The set contains enough pepper for more than 70 servings.

Black pepper, once ground, releases notes of eucalyptus, camphor, and thyme, accompanied by lime peel aroma. These gradually shift into seaside aromas with developing fruity tones. The dominant aroma is of peach and nectarine, followed by hints of citrus fruits, dried mandarins, and the earthy crust of sourdough bread.

White pepper is mild yet still peppery, caressing your taste buds. When ground, it reveals the scent of camphor, sage, and cedarwood, accompanied by gentle aromas of nutmeg blossom, grapefruit, and other citrus fruits. After a few minutes, you may detect notes of nutmeg, thyme blossom, and lemon balm, underpinned by cedar and black tea aromas.

The peppercorns come from small family farms in Cambodia’s Kampot province, where they’ve been grown for generations with respect for the soil, nature, and people. Farmers use traditional methods that ensure not only great flavor, but also ethical sourcing.

The set is also extremely environmentally friendly, made from recycled and natural materials that meet sustainable forestry certifications.

Processing

We divide Kampot pepper into three basic colors, which differ in the way the pepper vine berries are processed.

In the case of black pepper, the berries are harvested when the peppercorns are still green. They are then dried under the hot Cambodian sun, developing their characteristic black color and wrinkled surface.

Red pepper is obtained by harvesting fully ripe pepper berries. These ripen to a deep red color full of fructose, which gives this type of pepper its unique flavor.

White pepper is a specialty, obtained from fully ripe red pepper berries. These are then sun-dried and soaked again to remove the red skin, leaving only the creamy white pepper core.

Thanks to careful selection that meets the strict quality requirements for Kampot export pepper set by the Kampot Pepper Association, only the best berries are hand-picked. They are then vacuum-packed to preserve quality and freshness during transport to the Czech Republic, where they are further sorted, packed and delivered straight to your table.

Usage

Thanks to their different flavor, aroma and pungency, the various types of pepper are suited for different uses.

Black pepper is a universal ingredient that goes well with virtually any dish. However, it's ideal to pair it with dark red meat. It enhances every steak grilled or pan-fried to perfection and is also great in classic saucessoups, and goes well with pasta.

Red pepper is the king of cold cuisine thanks to its fruity character. It pairs well with vegetable salads, complements risotto and soups, and don't be afraid to experiment with it in sweet desserts or cocktails. Rather than pairing it with dark meat, try it with fish or light poultry.

White pepper pairs well with light meats. It beautifully complements the taste of seafood, works well with risotto and creamy soups, and its taste holds up even when combined with good pasta.

The finer you grind the Kampot pepper, the more intense the spiciness will be — on the other hand, larger fragments or whole grains will give the dish more of pepper's characteristic notes.
